Freeman, 28, grew up in Richmond, Virginia with a big family (22 first cousins and counting). Food was at the center of their familial relationship, from Thanksgiving dinner to their Fourth of July cookout and Christmas brunch at Freeman’s mother’s house. “There was always a lot of soul food—fried oysters, chitlins, certain staples,” she explains. It filled her with happy memories: “When it comes to soul food, there’s a little bit more love and thought and care put into it.” It also piqued her interest in cooking. As a student at Howard University in D.C., she took a job as a line cook at a local concert venue which later led to a manager position at famed city haunt Marvin. She loved the hospitality industry, but the nocturnal lifestyle it required started impacting her health. “That just brought along a lot of late nights—a lot of Jameson, things of that nature and not really keeping up with my body or my diet,” she says. “I was overworking myself and not really paying attention to my health.” So she decided to make a lifestyle change: she went vegan.
In 2019, Freeman moved to New York and enrolled in a plant-based cooking program at the Institute of Culinary Education. The pandemic hit soon after. Looking for work, she found a job working as a manager for Overthrow Hospitality, an award-winning vegan hospitality group founded by Ravi DeRossi. DeRossi got to know the young chef and listened to her pitch: While vegan restaurants were common across Manhattan, Freeman argued, soul food vegan spots were few and far between. When the space for Cadence became available, it was hers. It took over eight months of taste-testing to perfect her vegan vision. She looked to her old family recipes for inspiration: “The grits are my grandma’s staple, the palm cakes are similar to the salmon cakes my mom used to make,” Freeman says. “I’m just putting my own vegan and culinary twists on them.”
Everything on Cadence’s menu qualifies as comfort food, yet Freeman treats it with the utmost elegance, plating everything with precision. “I wanted to design a place where people are enjoying their soul food, but get the experience of a fine dining restaurant,” she says. It’s a culinary cause many can get behind. Due to the health and environmental benefits of the diet, interest around veganism in the United States is exploding. The Economist says that, since 2015, Google searches for “veganism” have doubled, and that a quarter of 25- to 34-year-old Americans say they’re either vegan or vegetarian. There’s particular resonance among Black Americans and other people of color: A Pew Research center report found that eight percent of Black Americans identify as strict vegans or vegetarians, as compared to three percent of the general population. Meanwhile, a January 2020 Gallup poll found that nearly a third of non-white Americans had reduced their meat consumption in the past year, compared to about one-fifth of white Americans. Cadence, and Freeman, aren’t just capitalizing on this trend. They’re leading it: “I think that I’m definitely opening up the eyes to what vegan food can be and what soul foods can be—and bridging that gap together.”
